What is Korean Fried Chicken?

Korean fried chicken is made using a double-fry technique that involves coating the chicken with a thin layer of potato or corn starch to get it extra 바삭바삭~ (crispy). The chicken is then fried twice, creating a lighter and crispier texture that locks in the juices and flavor, giving it a satisfying crunch with each bite.

Origin of Korean Fried Chicken

Apparently Korean fried chicken was made on the battleground.. This all happened during the 1940s and 1950s, South Korea (backed by the US) was in a war against North Korea with the Soviet Union and China. During Thanksgiving, American soldiers were facing a lack of turkey, so they turned to fried chicken as a way to bring a sense of home to their meal. This way of cooking was shared with Korean soldiers (who, btw, never had fried chicken before), making them break away from their traditional way of cooking chicken, steaming or boiling. From the 60s and 70s, fried chicken was only for special occassions but eventually in the 90s, the Korean fried chicken concept was popularized and it can be easily delivered and enjoyed as a cheap snack or meal.

What makes Korean Fried Chicken different from other fried chicken?

Besides its method of cooking aka the double-frying technique, Korean fried chicken uses a thin and light batter which creates this crispy crust. This also lets the flavors of the seasoning and chicken to shine through, without being too greasy. And if by any chance it gets too greasy, you can pair it with pickled radish or 무 (mu). It also makes a great palete cleanser in between dishes!
